white chocolate and strawberry
6oz digestive biscuits
2 1/2oz butter, melted
14oz white choc, melted
14oz strawberries, blended into a smooth paste
300g cream cheese
200ml double cream
- crush digestives and mix with butter
- pour mixture in a cheesecake tin and smooth until flat (20cm)
- refrigerate for 30mins
- mix strawberries with cream cheese and cream, may need to whisk to get rid of lumps
- add melted choc
- pour mixture over biscuit base
- chill overnight
- decorate with spare choc/strawberries
